Lemon Pepper Seasoning

Lemon infused ground peppercorn seasoning is tasty in salads, soups, sautees and on grilled foods and snacks.

Ingredients
  

  • 5 lemons large, organic
  • ½ cup black peppercorns

Equipment

  • Lemon zester (grater or vegetable peeler)
  • baking sheet with parchment paper
  • Lemon juicer
  • Coffee grinder or food processor

Method
 

  1. Preheat the oven to 200°
  2. Scrub the lemons very well to remove dirt from the peel.
  3. Zest each lemon over a bowl. Use as much of the lemon peel as possible.
  4. Add peppercorns to the zest.
  5. Juice 1 lemon and add to the peppercorn/zest mixture and stir well.
  6. Place parchment paper on a baking sheet and spread the mixture so that it can dry easily.
  7. Insert the pan into the oven for 1 hour.
  8. Using a fork, break up any clumps of zest that may not have dried, and return to the oven, checking every 10 minutes.
  9. When the zest is dry, remove from the oven and allow to cool.
  10. Pour the lemon/pepper mixture into a coffee grinder or food processor and grind well.
  11. Use a funnel and pour into clean spice jar, seal, label and store.
