Gluten-free, dairy-free and free of refined sugar, these energy balls are the perfect snack!
- 2 cups gluten free rolled oats
- ½ cup natural peanut butter
- ¼ cup honey (local, if possible)
- 2 T chia seeds
- 2 T cocao nibs (optional)
Place the oats in a food processor and process until the oats are reduced to a course powder. Add peanut butter and honey and process until combined. If the mixture is too crumbly, add a tablespoon or peanut butter. Add the cocao nibs and process one last time to mix the batter without completely pureeing the cocao beans. Roll into 1 inch balls and store in the refrigerator or freezer.
